Well, I had set a goal of blogging once a week, but that doesn't seem to be happening! There is just so much to do, not much time left once the day is done for actually sitting down and forming sentences in my blurry mind. I got a new computer, so I'm no longer without internet yay! I actually enjoyed the four days without it, believe it or not! It was different from the media fasts, because then I really, really wanted to get on the computer (what with it right there), but without the internet, we just hung out all weekend, and I really didn't miss it all that much! So hopefully, I will spend less time on here. There are so many other things that really are probably more constructive uses of my time:) I have to say my favorite part of having the new laptop will be getting rid of the U-G-L-Y desk in my room!!!
Although it was a little of a hit to our emergency fund, it was so comforting to know that the money was right there waiting to be used. No scrambling around trying to figure out how in the world were we going to afford it. I have to say that sometimes it feels like our emergency fund will never get finished...once we get our tax return back we will finally break the halfway mark, yay! It is said among those who do Dave Ramsey, that baby step 3 is the hardest...and it REALLY is! But it seems like *emergencies* have been coming up left and right since we started saving. Oh well, I know it will be finished soon...we are both just itching to start our car replacement fund and start paying extra on the house...we have a seven year goal on the house, we will see if we can do it!
So, I have been experimenting lately with new recipes, trying to recreate some of my favorite restaurant meals. Living in our budget usually allows for one only one restaurant meal a month, along with two or three fast foods meals. I suppose we could eat out more if I wanted to cut the clothing budget or the vacation budget...but no!! A girl NEEDS new shoes every now and then;) So, in order to satisfy my cravings, and make them healthier (without preservatives, using organic/natural ingredients), I've been making some at home! This week, I worked on my favorite meal from Popeyes, hot chicken tenders with red beans and rice. It was really easy to recreate this one:)
*Marinate chicken tenders overnight in Louisiana hot sauce
*Preheat oven to 350 degrees
*Coat chicken in crushed corn flakes and cook on a foil lined pan for one hour
*If you don't like them hot, use butter instead of hot sauce
For the red beans, simply cook up some dark red kidney beans seasoned with Tony Cachere's and some cayenne pepper. Serve over rice...very yummy meal:)
